Braised Chicken Wings with Potatoes (薯仔炆雞翼)

Ingredients
- 10 pcs of chicken wings

3 pcs of small potatoes (eg new potato)

3 slices of ginger

2 pcs of green onion (optional)

1 pc of carrot (optional)

1 tablespoon of soy sauce

1/2 tablespoon of sugar

1/2 tablespoon of Chinese ShaoXing wine (紹興酒)

1 teaspoon of cornstarch
-
1/2 tablespoon of oyster sauce
- Water (about 3/4 cup)
Directions
- Marinate chicken wings with soy sauce, sugar, cornstarch and wine.
Skin and cut the potatoes and carrot into irregular chunks. Cut green onion in 5 cm length.
In a frying pan, add some oil and heat with ginger. Add chicken wings and pan sear. When the chicken wings are golden brown on both sides, put them back to the marinate.
In the same pan, add potatoes and cook for a few minutes and add the carrot. Cook for another few minutes and add the chicken wings together with the marinate. Add water until the ingredients are half covered. Add oyster sauce. When the liquid boils, turn to low heat to simmer and cover with lid. Cook for about 10 minute.
Remove lid. Turn up the heat and cook until sauce reduces and thickens up. Adjust taste. Add green onion and stir up. Done!
