Braised Pork Riblet with Pumpkin (南瓜炆排骨)

Ingredients

300g pumpkin

400g pork riblet

2 tsp soy sauce

1 tsp sugar

1 tsp corn starch
-
2 tsp Chinese ShaoXing wine (紹興酒)
- One piece of green onion chopped (optional for garnishing)
Directions
Marinate the pork with all the seasonings, cornstarch and wine for 30 min. Skin the pumpkin and cut into cubes in about 3 to 5cm.
In a frying pan, add oil and put in the pork riblet. Keep the marinate. Cook at medium heat until seared golden brown and about half cooked.
Add in pumpkin with skin side down where possible. Add some water to the marinate and pour into the pan. The liquid should cover the contents at about 0.5 to 1cm depth. Turn to low heat and let simmer for about 10 min.
Check if the pumpkin is soft. If not, cook for a little longer. If yes, turn up the heat to reduce the sauce to your desired consistency. Adjust taste.
Serve with green onion sprinkled on top (optional).
