- 250ml whipping cream / double cream
- 60g sugar
- Juice of 1 lemon (abt 50ml)
In a saucepan, warm cream and sugar until dissolve and bubbling. Cook for 3 minutes.
Let cool of the sweetened cream for about 10 minutes. In the meantime, juice one lemon.
Slowly add lemon juice into the cream. Stirring continuously. You will see the mixture starts thickening. Taste and adjust when you added most of the lemon juice.
Pour mixture into 2 to 3 containers. Cover with cling film and put in fridge for about 2 hrs until set.
Top with fresh fruits, whipped cream, mint etc as you like and serve.
