Pineapple Drink with Crushed Ice (菠蘿冰)
- one pineapple
4 tablespoon sugar (adjust as needed)
juice of half a lemon
pinch of salt
- Crushed ice
- Peel and core the pineapple. Cut half of the pineapple into cubes and put in a bowl. Add sugar, lemon juice and salt and mix well. Cover the bowl with cling film and put in the fridge overnight.
On the next day, a lot of juice should have come out from the pineapple. In a frying pan, cook the pineapple with all the juices. Cook until the juice reduces to syrup and thicken a bit. Take it out and let cool to room temperature.
For the remaining half pineapple, blend it in a blender.
In a tall glass, put in the cooked pineapple and syrup, blended pineapple and crushed ice in roughly 1:1:1 ratio or to your liking. Top with some pineapple cubes. Done!
