Vada Pav is a popular street food in India in which a spicy potato ball is placed between burger buns and is served with spicy and sour chutney (a kind of sauce).
Ingredients
- 2 tsp oil

Directions
Garlic Chutney
- Take a pan and add oil. put the pan on medium heat. Add chopped garlic cloves and saute them for 2 minutes until they turn light brown. Set them aside.
On the same pan add grated coconut and saute it until it turns golden.
Take a blender and add the coconut and toasted garlic along with salt and chilli powder according to your taste.
Green Chutney
- Add fresh coriander in a blender. Before putting them to it, remove the hard stems.
Now, add green chilli along with the cloves of garlic, cumin powder, lime juice and salt and sugar to taste. Add a tablespoon of water into it. Blend them together to form a smooth paste.
Tamarind Chutney
- Take a pan and add water. Now, into it add the tamarind paste along with jaggery, cumin and ginger powder, and sugar and salt to taste. Bring it to a boil.
Reduce the flame and cook for 5 minutes until the mixture turns thick. Turn off the oven and set aside the chutney.
Making of Vada
- First, let's make the batter. Take a bowl and add chickpea flour. Now, to it add turmeric, baking soda and salt. Add water slowly and keep on whisking it gently. Whisk until it turns to a smooth batter with the desired consistency. Set the batter aside.
Take all the potatoes and boil them. Once boiled, peel them off and keep them aside.
Take a mortar and pestle to grind the green chillies, garlic and ginger.
Take a pan on medium flame and add a tablespoon of oil into it. On the hot oil, add the mustard seeds along with curry leaves and asafetida. Saute them for a minute. Now, remove the pan from the flame and add the potatoes. Add a pinch of salt and turmeric into it and using a potato masher, mash the potatoes. To enhance the flavour, add chopped coriander.
Using hands make balls out of the mashed potatoes.
Take a wok and add oil into it. Dip the potato balls in the batter and coat them well. Once the oil in the wok is hot, drop the balls into the oil. Fry the potato balls until they turn brown. Drain the excess oil using a paper towel.
Assembling Process
Before assembling the buns and potato balls, add butter to a pan and toast the buns/pav. Slice each bun into two halves. However, remember to keep them attached.
Apply tamarind chutney one side and green one on the other side of the bun. Apply the garlic chutney on both the sides over the green and tamarind chutneys.
Place the potato balls in the centre. Your Vada Pav is ready to be served!
